boil until skin cracks...

cool in ice water... (the ice was gone by the time I put the first batch in :-)

let drain for 8-12 hours

mix with other yummy veggies and then eat away, or can can can!

I canned 4 pints and saved the rest for Rich and I to eat right away. It's so yummy!! The only problem now is we are both a little freaked out about getting botulism! Everything I've read says DON'T CHANGE THE AMOUNTS OF VEGETABLES OR LIME JUICE but seriously??? When the amount on the recipe calls for 2 large peppers... who's the judge on what large is?? Basically I am a complete over-analyzer, to the point I'm debating on throwing out the salsa I have canned because I feel this recipe wasn't exact enough... what do you think???
